Crunchy Canapés with Onion and Taramasalata

This is easy and one of my favourites. You can prepare it in advance or serve the contents in separate containers for you and your guests to assemble the canapés while you drink.

You will need

  • Taramasalata (at least 200g/7oz)
  • A red onion
  • Bitesize rice crackers (or equivalent canapé base such as croustade, blini, cucumber road, toast etc)
  • Lumpfish roe to garnish (optional)

How to prepare

Take a tub of taramasalata and mix it with finely diced red onion.

I would use a ratio of around half a red onion to 200g / 7oz taramasalata.

Service

You can then serve it in individual dishes at the drinking table, alongside crackers, or other forms of ‘vehicle’ for the mixture such as cucumber rounds, oatcakes, croustades, miniature blini or any other form of canapé palette.

You can then assemble your own while you drink your martini at a leisurely pace – which is my preferred method.

Alternatively you can prepare the canapés in advance and serve them to your guests (or just yourself) for minimal effort to interrupt your drink.

Garnish

As you can see here, you can also garnish this canapé with additional diced red onion, as well as black lumpfish roe for a striking colour contrast.

  1. I can find red onions a little strong. I normally find I can chop shallots finer. With that in mind here are some other alternatives

    1. French shallots are milder.

    2. Pikant shallots can have a pink or red flesh for that contrast.

    3. The French Grey shallot is purple inside but is a little stronger in taste – a heftier gin may be appropriate.

    4. The Banana Shallot has a mild taste.

    5. The Jersey shallot is more aromatic – vodka martini anyone?

    f course you could try them all on a back to back tasting, possibly even a three martini experience. Although by the end will you know which you are tasting and which just to cover the alcohol.

    Of course you could be a little more logical and find the best tasting one for you and then drink. But, why be sensible…
