A Round of Rice Cracker Canapés

Here are some canapés I have recently enjoyed. They have all been assembled atop lightly salted rice crackers from the Snack Organisation.

They are baked, not fried, gluten free and suitable for vegetarians. They also have a good shelf life, making them super convenient for last-minute canapé preparation. And no, this ISN’T a sponsored post!

Here is some herb and tomato paste on rice crackers topped with halved pickled pearl onions. Simple, easy and tasty.

This is a rice cracker topped with tomato puree, a slice of avocado, a splodge of chilli mayo and sprinkled with crispy fried onions. It’s not the most sophisticated looking arrangement but it had a very nice combination of crunchy and silky textures.

It’s no wonder that these crackers have become a bit of a stallwort of my canapé cupboard. They’re also about 4 cm or 1.5 inches so they’re nice and bite size. Here’s one topped with smoked mackerel paté, a smoked mackerel sliver, plus some lemon zest and a slice of pickled gherkin.

The rice crackers topped with mackerel paté alone are delicious but if you want to make them more visually appealing with different textures you can also top the paté with a slice of pickled gherkin or some lumpfish caviar.

Here is some parsley mayonnaise on rice crackers with a pickled mussel on top. The parsley to mayonnaise ratio was about 1:2 (plus a pinch of salt) and it would make a very tasty base for lots of things.

There are probably an infinite number of combinations you could assemble with these crackers, such as the taramasalata selection above. I’d love to hear what you’ve arranged yourself!
